The blood sugar cannot be affected by a short period of “cramming” the proper diet

Two Viennese doctors, Adlersberg and Porges, conducted just such an experiment.10 To their pleasant surprise their patients were kept in balance with considerably less insulin than they had needed when taking only 100 grams of carbo¬hydrate. A revolutionary discovery had been made: diabetics are best treated by restricting the fats. Now the doctors as well as the patients discarded the old diets. It was difficult, however, to convince the diabetic of the new concept. If sugar appears in the urine we must be taking in too much sugar. We must therefore restrict the intake of carbohydrates, since they are entirely converted into sugar. This was good logic.

Logic is that science which deals with the derivation of conclusions from premises according to the laws of valid reasoning. What is seldom recognized is that while the reasoning might be valid, invalid premises lead logically and inexorably to invalid conclusions. We must re-examine our premises. Himsworth has shown that diabetics were not excessive eaters of starch before they developed the disease.11 They were excessive eaters of fats. He has shown that the nations and peoples whose diet is mostly carbohydrate—such as the Chinese and Japanese, whose staple food is rice—have very little diabetes. On the other hand, the Jews who consume so much animal fat, and the Italians with their large use of olive oil, are most afflicted with the disease.12We know now that fat is definitely depressing to the ac¬tivity of the insulin apparatus.
